LBrown - One of my many favourite maple syrup recipes. So easy and so maple syrup-y.

Maple Syrup Pie

1 1/2 cups brown sugar
1/2 cup heavy cream (35% M.F.)
1/3 cup maple syrup
1 large egg, at room temperature
2 tsp. butter, at room temperature
8-inch pre-baked pie shell
whipped cream, as garnish

Preheat oven to 350 degrees F. In a large bowl with an electric mixer blend together sugar, cream, maple syrup, egg and butter until smooth and creamy. Pour into prepared pie shell and bake 45 minutes. Remove from oven and cool to room temperature. Serve garnished with freshly whipped cream. Serves 6.

amy - try egg free oatmeal cookies using maple syrup 1 cup and half a cup of apple sauce instead of the eggs depending on your favorite oat meal cookie recipie you may want to use less sugar too. this can be substituted in any oatmeal cookie. we have an egg allergy in the home so we always do this in our daughters favorite oatmeal cookie.
